Roasted Brussels Sprouts with Goat Cheese & Pomegranate

Ingredients

1 pound brussel sprouts, trimmed and halved

1 large shallot, sliced

1 TBSP olive oil

1/4 tsp salt

1/4 tsp pepper

2 tsp white balsamic vinegar

1/3 cup crumbled goat cheese

1/4 cup pomegranate seeds

Preparation

1) Preheat the oven to 400 degrees F. Toss the Brussel sprouts with shallot, oil, salt, and pepper in a medium bowl. Spread on a large baking sheet.

2) Roast the Brussel sprouts until tender, 20-22 minutes. Return to the bowl and toss with vinegar, sprinkle with goat cheese and pomegranate seeds.
