Roasted Brussels Sprouts with Goat Cheese & Pomegranate

- 1 pound brussel sprouts, trimmed and halved
- 1 large shallot, sliced
- 1 TBSP olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tsp white balsamic vinegar
- 1/3 cup crumbled goat cheese
- 1/4 cup pomegranate seeds
Preparation
- Preheat the oven to 400 degrees F. Toss the Brussel sprouts with shallot, oil, salt, and pepper in a medium bowl. Spread on a large baking sheet.
- Roast the Brussel sprouts until tender, 20-22 minutes. Return to the bowl and toss with vinegar, sprinkle with goat cheese and pomegranate seeds.
