Roasted Brussels Sprouts with Goat Cheese & Pomegranate

  • 1 pound brussel sprouts, trimmed and halved
  • 1 large shallot, sliced
  • 1 TBSP olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp white balsamic vinegar
  • 1/3 cup crumbled goat cheese
  • 1/4 cup pomegranate seeds

Preparation

  1. Preheat the oven to 400 degrees F. Toss the Brussel sprouts with shallot, oil, salt, and pepper in a medium bowl. Spread on a large baking sheet.
  2. Roast the Brussel sprouts until tender, 20-22 minutes. Return to the bowl and toss with vinegar, sprinkle with goat cheese and pomegranate seeds.
