Vegetable Stuffing Ingredients

  • 3 pounds sweet potatoes
  • 2 ½ TBSP maple syrup
  • ½ cup unsweetened almond milk
  • 1 TBSP vanilla extract
  • 1 egg
  • 1 teaspoon cinnamon
  • ¼ tsp nutmeg
  • Pinch of allspice
  • ¼ tsp salt
  • For the topping: ¼ cup whole wheat pastry flour
  • 1/3 cup rolled oats
  • 1/3 cup coconut sugar
  • ½ cup chopped pecans

Preparation

Directions

  1. In a large skillet over medium heat, melt butter.
  2. Add Onion carrot, and celery, and sauté until soft.
  3. Add cauliflower and mushrooms and season with salt and pepper. Cook until tender.
  4. Add parsley, rosemary, and sage and stir until combined.
  5. Pour over broth and cook until totally tender and liquid is absorbed.
  6. Enjoy!
