- 3 pounds sweet potatoes
- 2 ½ TBSP maple syrup
- ½ cup unsweetened almond milk
- 1 TBSP vanilla extract
- 1 egg
- 1 teaspoon cinnamon
- ¼ tsp nutmeg
- Pinch of allspice
- ¼ tsp salt
- For the topping: ¼ cup whole wheat pastry flour
- 1/3 cup rolled oats
- 1/3 cup coconut sugar
- ½ cup chopped pecans
Preparation
Directions
- In a large skillet over medium heat, melt butter.
- Add Onion carrot, and celery, and sauté until soft.
- Add cauliflower and mushrooms and season with salt and pepper. Cook until tender.
- Add parsley, rosemary, and sage and stir until combined.
- Pour over broth and cook until totally tender and liquid is absorbed.
