Cod with Crispy Green Beans

Ingredients
Yield: 4 Servings
- 1 pound green beans
- ¼ cup grated parmesan
- 2 TBSP olive oil
- 1 ¼ pound skinless cod, cut into 4 pieces
- 2 TBSP basil pesto
Preparation
Cod with Crispy Green Beans
- Step 1- Heat the oven to 425 degrees F. On a large rimmed baking sheet, toss the beans with 1 TBSP oil, then the parmesan and salt and pepper to taste. Roast until golden brown. About 10 to 12 minutes.
- Step 2- Heat the remaining TBSP oil in a large skillet over medium-high heat. Season the cod with ¼ teaspoon salt and pepper and cook until golden brown and opaque throughout. About 3 minutes per side.
- Step 3- Spoon pest over the cod and serve with the beans.
